Actually, that happens when your body falls asleep faster than your brain. You're conscious and awake when it happens since your brain is still active, and doesn't recognize that the body has fallen asleep.
The feeling of falling stems from losing control of your muscles as they sleep and relax, and the brain mistakes it for falling, so you immediately jolt right back up.
