The Minions movie retconned a few things out. Apparently, the creators mentioned that Gru actually created the minions from genetically modified corn, but now it's no longer canon, and whatever source existed seems to have evaporated into thin air. There was also a schematic in the girls' room which showed a schematic of a minion, but I can't find any pictures of it. Regardless, they were intended to be artificial beings, until they saw it profitable to create a new canon.
