A thousand years ago "science" was generally called as "natural philosophy" and was based on the classical texts of long dead authors such as Martianus, Priscian, Donatus, Boethius and Martianus Capella. This would have meant learning Latin. They were just getting into stuff like Aristotle (who wrote an awful lot) from the Muslim translations of the original Greek. Basically it's a lot of book learning a thousand years ago (as much as today really) with the added bonus that it was useless information based on theories that have since been disproved via later science. Plus the teacher isn't very good to start with as he/she has missed off "air". So, you know, I think a better subject would be history as there would be a thousand years less of it back then...
